I don’t yet have a Fourier unit, but I’d like to see how the software works, so I was hoping there’s a way to use it without being connected to a unit.

At the moment, no, there isn’t any offline software. We are exploring ways to do this but it’s sadly not that straightforward. As we are running a Linux kernel running a virtual Windows environment, an offline editor would also need to run a virtual Windows environment which would need licensing.
Hence this would be a costly solution, we are looking into other ways we could do this, but we haven’t got a timeline for this currently.
